Jalapeno popper corn muffins (adapted from the rachael ray show without the hot dog)

hello readers, just now I whipped up a batch a jalapeno popper corn muffins from the Rachael ray show page and it used hot dogs, so it was originally corn dog poppers but I changed name because there were no leftover hot dogs so I hope you whip up a batch of these and I also made sriracha honey butter you can serve with it or use regular honey butter if you don't want spicy so enjoy!





this is my homemade sriracha honey butter so all you do is in a bowl pictured here mix 4 tbl softened butter with 1 tsp honey and 1 tsp sriracha chili sauce, cover and refridgerate until ready to serve so let's make muffins!


Jalapeno popper corn muffins
adapted from the Rachael ray show
  • 2 ounces cream cheese
  • 1 box Jiffy cornbread mix
  • 1/3 cup milk
  • 1 egg 
  • 1 jalapeo, diced
  • Nonstick cooking spray
  • method
  • Preheat oven to 375F.
    Put the cream cheese into the freezer for about 5 minutes to chill. Cut into cubes.
    In a mixing bowl, combine the cornbread mix, milk and eggs. Fold in  jalapenos  and cream cheese.
    Spray a mini muffin tin with nonstick cooking spray then divide the cornbread mixture equally into the muffin cups. Bake 15-20 minutes
