Mexican Tortas (great for movies or concerts at the park picnic)

dear readers, these mexican torta sandwiches were super good it does have a kick, but its super hearty, so i just got back from watching Brave Movie at the park with my brother casey and his fiance liz and their 3 kids Tyler, Gavin and Lily, all had a great time and i ran into My sister Molly's Niece Megan the beloved red haired girl and her Couisns-in laws Ronald and Jovis and their baby daughter and it was a fun time, so will expand more menu items for next movie night on august 16th so more recipes will come, so i hope you re-create the recipe at your next picnic at the park venue
Mexican Tortas
Recipe from Michael Symon of ABC channel 7's the chew but adapted by Chef Ava Marie

  • 1 pound Raw Chorizo
  • 6 Eggs (beaten)
  • 2 Avocados (pitted, scooped and diced)
  • Juice of 3 limes
  • 1 bunch Cilantro
  • 1 red onion, small diced
  • 2 tablespoons Extra Virgin Olive Oil
  • Salt and Freshly Ground Pepper
  •  5 Mexican Torta Rolls (split and toasted) or a big hamburger bun toasted
 Heat the olive oil in a skillet over medium-high heat. Add the chorizo and fry, breaking up as it browns. Once the chorizo is fried, remove from heat. Add the eggs and stir into the sausage. Season generously with salt and pepper. Cook until the eggs form soft curds. Remove from heat.
 Toast the rolls and spoon the chorizo-egg mixture onto each of the rolls and on the other top half of buns smear it with my guacuamole and top the bun onto chorizo egg mixture. wrap in foil and you are ready to go to a concert or movie at the park
for guacamole smear mash avocados with a fork and season with salt and pepper and lots of lime juice. until the mash consistency then fold in chopped cilantro and red onion, taste and season. and place in a airtight container until ready to use for tortas or use as with tortilla chips
