Spiced Lettuce soup with goat cheese (Autism chef's book club of the month- June)

Spiced lettuce soup with goat cheese

2 tbl unsalted butter
1 onion finley chopped
1 clove garlic minced
1 tsp ground cumin
1 green sweet pepper seeded and very finely diced
1 large lettuce or 2 bags shredded lettuce (you find at most safeway stores mostly used for tacos to save time, but always wash them before use) shredded
6 cups chicken stock
5 oz soft finely diced goat cheese

melt butter in a large soup pot and gently sauté the onions, for 5 minutes but add the garlic for the last 2 minutes or it will burn
sprinkle with cumin stir thoroughly and cook for 2 more minutes. add the pepper lettuce and stock and simmer for 5 minutes. blend in food processor, blender or use a hand blender until smooth. then return to the soup pot to heat through
serve hot with the diced goat cheese on top
