Goat cheese and mint Guacamole dip

this dip was one of my favorites, you wonder why i use the white stuff because its goat cheese and the mint gives it a nice breathly flavor, so this recipe was from Michael symon on the chew, he did 3 types of add ins i love the crab idea originally, but i couldnt have it, because my mom has allergic reactions to shellfish, such as that and shrimp, i love shrimp, but i make sure to have shellfish 2 x a week at least no more because of allergic reactions ,its like being gluten free okay  but used the goat cheese and mint, he also did a bacon and blue cheese, which also sounded good to me, but today im sticking with the goat cheese and mint and will share it so enjoy!

Goat cheese and mint guacamole dip

  • 3 Ripe Avocados (pit removed and scooped into a bowl)
  • 1/2 small Red Onion (minced)
  • 1 small Jalapeno (seeds and rib removed; minced)
  • Salt to taste
  • 1 1/2 - 2 tablespoons fresh Lime juice
  • 2-3 tablespoons chopped Cilantro
  • 1/4 cup Goat Cheese (4-ounce log)
  • 1/4 cup Mint (chiffonade)

  • method
     In a medium mixing bowl, combine all ingredients, mashing the avocados as you go. You are looking to achieve a relatively smooth consistency with small lumps of avocado. Check the seasoning, adding more salt or lime juice if needed Crumble the goat cheese into the guacamole and fold it in along with the mint. serve with tortilla chips or the Dear martini chef's Chili recipe i made the last post!
