Chipotle Tomato Stovetop chicken

hello readers, i made some delicious chicken dinner tonight need to expand your chicken dinners, here it is and will have more for you to come in my future blogs, im serving it over rice, so please enjoy this dinner

Chipotle tomato chicken thighs
from Everyday Food Adapted by Chef Ava Marie , the own autistic cook

ingredients
4-6 bone in skin on chicken thighs, we use boneless skinless
salt and pepper
2 tbl canola oil
1 medium white onion, thinly sliced
2-3 garlic cloves, minced
1 1/2 tsp ground cumin
1 tbl chipotle puree from the can- see note
2 cans 14 oz diced tomatoes
cooked rice for serving

season  chicken with salt and pepper. in a large skillet or dutch oven heat oil over medium high heat, in batches if needed cook chicken skin side down until browned 7 minutes transfer to paper lined plate.
reduce heat to medium. add onions and saute until soft and transculent about 5 minutes. scraping any brown bits from pot. add 2 tablespoons water
add garlic, cumin and chipotle puree cook until garlic is soft and infused 2 minutes. add tomatoes season as needed and bring to a simmer for 5 minutes breaking tomatoes down with a wooden spoon.return chicken to pot and their juices too, bring to a simmer cover and cook until chicken is cooked through 15 minutes, serve over rice!
